Ben's Favorite Salad

We've been trying to eat better these days, so we've been trying loads of different salad recipes - the more good ones in the arsenal the better! Anyway, this was a great salad with great flavors. It's filling and easy, one that will easily make it into our weekly rotation.


1 head romaine lettuce
1 can tuna (get quality tuna!)
2 tart apples, cut into cubes
1/2 cup pumpkin seeds
1/2 cup swiss cheese, shredded
lemon juice
olive oil
salt

Rinse and chop lettuce, let dry. Place all ingredients into a bowl, and toss with dressing.

Broccoli Bacon Salad

Ok, with the new baby I haven't been cooking much. I've tried to keep everything I make both very healthy and very easy so as to keep life simple. During Christmas I tried out this salad and it was delicious. Tons of flavor and totally easy to make. You could experiment a little bit by adding tomatoes and cheese but it's great as is.


1 head broccoli
6-8 slices cooked bacon, crumbled
1/2 cup finely chopped red onion
1/2 cup raisins
1/2 cup almonds, toasted

Dressing:
1 cup Mayonnaise
1/4 cup white sugar
2 Tbsp white wine vinegar

Place bacon in a skillet and cook over medium high heat. Once browned, drain grease on a paper towel and crumble. Rinse the broccoli and cut it into small, bite sized florets. Toast almonds in olive oil in a pan on the stove and sprinkle with salt until golden. Toss bacon, broccoli, raisins, almonds and onion together in a large bowl.

Whisk dressing in a bowl until smooth. Pour over broccoli mixture and toss to coat. Refrigerate until ready to serve.

Couscous Confetti Salad

I got this recipe from a friend and brought it to a barbecue this weekend because I hate showing up and all there is to eat are chips and cookies. At the end of the party, this salad was nearly gone, but there were several bags of sweets leftover and this got me thinking: Most adults I know are trying to maintain a healthy weight and have trouble sticking to their diets at parties. While I love a good cookie as much as the next person, I'm coming to firmly believe that you should bring healthy food to every party.


Healthy food makes everyone feel better!

2 cups cooked Couscous + vegetable bullion
1 cup cherry tomatoes
1 red onions
1 red beans
1 cucumber
2 cups corn
1 Tbsp lemon juice
Salt and pepper to taste

Prepare the couscous according to the box directions, including the bullion cube in the water for flavoring. Set aside. Cut cherry tomatoes into quarters, dice the onion thinly, chop up cucumber and mix altogether.  Combine all ingredients into a bowl and mix well with couscous. Enjoy!

Simple Greek Salad

This is one of my favorites, such great flavors all mingled together and it is so easy. It's perfect for summer.

Serves 4

5-6 medium tomatoes, chopped
1 cup olives
1 cucumber, chopped into small pieces
1 small red onion, sliced thinly
1/2 cup feta cheese, crumbled
1-2 tsp lemon juice
salt and pepper to taste
2 tsp basil

In a bowl, mix together tomatoes, olives, cucumber and onion. Mix well. Then toss in Feta, lemon juice, salt, pepper and basil. It's best if you make it a few hours before dinner so you have time for the flavors to mingle. Enjoy!

Ben's Favorite Salad

I'm blessed. I married a man who likes salad. Loves it really. Which makes eating healthy in our house much easier. Lately Ben has been on this tuna+avocado+balsamic vinegar kick and made this creation last week for me and I was in heaven.

2-4 servings

1 bowl of leafy greens, torn into pieces
1 ripe avocado, cut into chunks
2-3 tomatoes, seeded and diced
1 can high quality tuna (packed in water)
1 red onion, thinly sliced
1/2 cup toasted almonds
Balsamic Vinegar
Olive oil
salt and pepper to taste

Prepare the greens and top with avocado, tomatoes, tuna, red onion. Drizzle with equal amounts of oil and vinegar and sprinkle on some salt and pepper to taste. Lets be honest here, you just toss it all together and eat. Perfect!

Summer Peach Salad

I look forward to the day when you walk into a grocery store and peaches are on sale. I end up buying so many that peaches are part of every meal in order to eat them all before they spoil. This is an easy, versatile salad and a delicious way to say goodbye to summer.

Salad
3-4 large peaches, sliced
3-4 tomatoes, chopped and seeded
salad greens
mozzarella cheese
1/2 cup nuts

Fruity Vinaigrette
1/4 cup orange juice
2 Tbsp balsamic vinegar
1 Tbsp mustard
2 tsp honey
1/8 tsp pepper
1/8 tsp poppy seeds

Chop up lettuce or other salad greens and put in a large bowl. Chop peaches and tomatoes, and add them to the bowl and toss. Grate mozzarella on top and garnish with nuts. Mix vinaigrette ingredients together in a small bowl and serve on the side.

Timo's Asian Salad

We had this salad at our friends house one night and were blown away by its simplicity and flavor. It pairs nicely with any asian dish and is cheap and easy to put together.

2-3 carrots
3-4 cups cabbage
2 Tbsp green onion (or red), chopped into small pieces
1 cup pineapple chunks
sunflower seeds

4 Tbsp oil
4 Tbsp soy sauce
4 Tbsp lemon juice
1 chili, minced (or 1/2 tsp dried)
1 tsp sugar or honey
salt and pepper to taste

Chop the carrots in to matchsticks. Then chop the cabbage very finely to make about 3-4 cups. Mix together with onion, pineapple chunks and sunflower seeds. In a small bowl, whisk together dressing ingredients and pour over salad. Toss until evenly coated and serve.

Carrot Salad

Ok, this recipe is so simple, but I thought it deserved a post.
I love carrots, but had never enjoyed them like this before:


Finely grated, with pineapple, raisins or great with salad dressing.
Grating the carrots really brings out their sweet, juicy flavor. It is a perfect side dish for those nights where you don't have time to put a lot of time into dinner, but still want something healthy and delicious.

serves 4

5-6 large carrots
pineapple (or raisins)

Peel the carrots and finely grate them into a bowl. Toss in the pineapple (or raisins. or both) and serve.

Maple Pecan and Apple Salad

I love interesting salads. And when I spotted this one that combined maple syrup, apples and nuts, I knew I had to try it. It was amazing! We ate the whole bowl without effort. You really can't go wrong with fruit, nuts and cheese.

Serves 4-6

Salad
1 medium bowl full of mixed leafy greens
2-3 apples, cored and diced (toss in lemon juice to prevent browning)
1/2 cup maple glazed pecans (*see instructions below)
1/2 cup crumbled chevre or feta

Maple Vinegar Dressing
1 tsp dijon mustard
2 Tbsp finely minced shallots
2 Tbsp balsamic vinegar
2 Tbsp pure maple syrup
1/3 cup olive oil
salt and pepper to taste

* Maple Glazed Pecans
2 Tbsp pure maple syrup
1 Tbsp brown sugar
dash os salt
dash or cayenne pepper
1 cup pecan halves

For the vinaigrette: Combine mustard, shallots, vinegar and maple syrup in a mall bowl. Whisk in oil until just combined, season with salt and pepper and set aside.

For the pecans:
Preheat the oven to 325 F (160 C). Combine maple syrup, brown sugar, salt and cayenne in a small bowl. Add pecans and toss until coated. Spread out nuts on a rimmed baking sheet lined with baking paper or foil. Toast for 10-15 minutes, or until nuts are golden and sugar is bubbling. Let cool completely, break apart and serve.

Place mixed greens and apples in a large serving bowl. Top with nuts and cheese and serve with dressing on the side.

Pomegranate and Feta Salad

This salad was just gorgeous! The cinnamon in the dressing combined with the bright colors made it perfect for the Christmas season.


6-7 cups spinach (or other green salad)
seeds from one pomegranate
1/2 cup pecans, candied
1/2 cup crumbled Feta

Dressing:
6 Tbsp olive oil
2 Tbsp apple vinegar
2 tsp honey
1/2 tsp cinnamon
salt and pepper to taste

Combine salad ingredients. Mix together dressing ingredients and serve on the side.

BLT Salad with Tomato Dressing

I love BLT sandwiches, they are so simple and delicious. Unfortunately right now I am trying to go carb free so when I saw this variation online I had to try it out. The dressing is packed with flavor and goes perfectly with the rest of the ingredients.

Lettuce, shredded
2-3 tomatoes, diced
1 avocado, diced
1 small purple onion, diced
1/2 lb bacon, crumbled

Dressing:
3 roma tomatoes
1 clove garlic
2 Tbsp red wine vinegar
4 Tbsp oil
salt and pepper to taste

Cook and drain bacon and combine with lettuce, tomatoes, avocado, and onion chunks.

For the dressing, begin by cutting an "X" at the bottom of each tomato. Then plunge them in boiling water for about 30 seconds, then take them out and quickly immerse them in cold water. This makes the skin separate so it slides right off. Once the skin is peeled, squeeze out most of the seeds, chop roughly and transfer them to a blender along with the garlic clove, red wine vinegar, and oil. Pulse blender until everything is smooth. Serve alongside salad and enjoy!

Persimmon and Pear Salad

I had never really tried Persimmons before, but a lady in our ward gave us some so I had to find a recipe to use them in. Persimmons are great, I can't believe it took me 26 years to actually try one. We will definitely be eating them again soon.


Lettuce
1 cup pecans, candied (1 Tbsp sugar, 1 tsp salt, 1 Tbsp butter)
1/2 cup swiss cheese, grated
2-3 ripe persimmons
2-3 ripe pears

Dressing:
1/4 cup rice vinegar
2 Tbsp orange marmalade
1 tsp oil
sesame seeds
salt
pepper

Chop and wash lettuce. In a frying pan, heat butter and toast the pecans with sugar and salt until golden brown. Set aside to cool. Peel the pears and persimmons and chop them into chunks. Combine all salad ingredients. To make the dressing, mix all ingredients until well blended.

Panzanella Salad

My family has always been of the "waste not, want not" philosophy, and I had a loaf of stale bread that I felt bad throwing out. So I made a panzanella salad instead. Panzanella is an Italian salad made from bread and tomatoes, tossed in a light vinaigrette. The bread soaks up the juices from the tomatoes and dressing, resulting in a delicious flavorful dish.


Dressing:
1/3 cup balsamic vinegar
1/2 cup olive oil
1-2 cloves of garlic, minced
2 tsp dried basil
1/2 tsp dried oregano
salt and pepper to taste

Salad:
1 stale baguette (or other bread) torn into bite sized chunks
4-5 tomatoes
1/2 red onion, sliced thin
1/2 cup kalamata olives, chopped
1/2 cup crumbled Feta cheese

Mix your salad ingredients and place them in a large bowl. Whisk your dressing and pour over the bread and tomato mixture until the bread cubes absorb the dressing. You don't have to use all of the dressing, just use as much as you deem appropriate. Let it sit in the bowl for about an hour to let the flavors mingle together and allow the bread to absorb the juices.

Roasted Potatoes and Green Beans Salad

I love roasted vegetables, there is so much flavor released and it is so easy to do. This is a simple salad that would taste great as a side dish or a light lunch.


1 lb of potatoes, with skins on
2 onions, roughly chopped
1 lb green beans (would also taste great with chunks of Zucchini)

Dressing:
1/4 cup olive oil
2 Tbsp red wine vinegar
1 Tbsp Dijon mustard
1 Tbsp parsley
3 tsp sugar

salt and pepper to taste

Whisk dressing and set aside. Quarter the potatoes and place them in a bowl. Chop the onions into thin strips, and place them into the bowl with the potatoes. Drizzle the mixture with salt and olive oil and toss to coat evenly. Place on a baking sheet and roast at 400 (204 C) for about 25-35 minutes, or until crispy.

Blanch your green beans in boiling water for only about 5 minutes (so they stay crispy) and drain in a colander. You can rinse them with cold water to prevent them from cooking longer if you like.

Once potatoes/onions are done, combine them together and just before serving, pour the dressing over the whole mixture. Best served warm, but tastes great at room temperature as well.

Baked Tilapia Salad with Thai Peanut Sauce

This salad was so good. The dressing was a snap to put together and the next day Ben was asking if we had any leftover.

Serves 2-3

Salad Ingredients
2-3 tilapia filets (or other white fish)
Lettuce or other leafy greens
2-3 carrots, peeled and julienned
1 red pepper, diced
mushrooms (optional) chopped
tomatoes (optional) chopped

Thai Peanut Sauce (makes 1 cup)
1/4 cup water
1/4 cup rice vinegar
1/4 cup canola oil
1 Tbsp soy sauce
2 1/2 Tbsp white sugar
4 Tbsp creamy peanut butter
1 Tbsp chili sauce, or 1/2 tsp red pepper flakes
3 Tbsp fresh cilantro, minced

Heat peanut sauce in a sauce pan on low and stir 5 minutes until peanut butter is smooth and creamy. Let cool.

If using frozen fish; defrost, rinse, and pat dry. Place in a baking dish and marinate in 1/2 cup of the sauce. Make sure all of the fish gets covered. Marinate in the fridge for 30 minutes to several hours. Meanwhile, tear lettuce and prepare and combine vegetables for salad.

Place baking dish in the oven and bake for 30-35 minutes at 350, or until flaky and cooked through. You can also wrap filets in foil and grill for 4-5 minutes each side.

Serve salad with peanut sauce on the side. Place fish atop and serve. Great with rice.

Cabbage and Almond Salad

Adapted from Everybody Likes Sandwiches

I wanted a salad that was a little different from the lettuce/tomato/cucumber mode and I found this one that turned out great. I added toasted almonds and some red pepper for color and it was crunchy and delicious.

1/2 cabbage
1-2 red peppers, diced
1/2 cup toasted almond slivers
1 cup garbanzo beans

Dressing:
3 Tbsp olive oil
2 Tbsp Red wine vinegar
2 Tbsp lemon juice
1 Tbsp honey
1/2 Tbsp parsley
1 clove garlic, finely minced
salt and pepper to taste

Toast the almonds with a little oil and salt until lightly browned. Set aside. Dice the cabbage into small pieces and add in the red pepper and garbanzo beans and toss. Mix the dressing in a small bowl, pour desired amount onto the salad, and toss. Garnish with almonds and serve.

Fruit and Feta Salad

This quick salad combines sweet and tangy, and is a great way to eat your fruits and veggies.


spinach
2 apples, diced
2 oranges, chopped
1/3 cup walnuts, chopped and toasted
1/3 cup raisins
1/3 cup crumbled Feta

Dressing:
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp honey
1 Tbsp orange juice
1 Tbsp Parmesan cheese, grated
1 tsp poppy seeds
salt and pepper to taste

Prepare salad ingredients and toss together. Mix up dressing and serve on the side.

Tuna Salad with Dill Vinaigrette

Adapted from Allrecipes

This is a great salad for those wanting to eat a light meal, but not lose out on flavor.


Large bunch of leafy greens
1 can kidney beans, drained and rinsed
2 cans tuna, drained
1 jar Kalamata olives
crumbled Feta
1 cucumber, diced
3 tomatoes, diced

Dressing:
6 Tbsp olive oil
1 1/2 Tbsp white wine vinegar
1 1/2 Tbsp lemon juice
2 garlic cloves, finely minced
2 tsp dill weed
1/2 tsp salt
1/2 tsp pepper

Drain tuna and add salt and pepper. Combine salad ingredients, serving the tuna on the side. In a small bowl, combine dressing ingredients and mix well. Enjoy!

Cafe Rio Pork Salad

Adapted through trial and error from Cafe Rio

Living in Finland, we are pretty hard pressed to find good Mexican food. There are some restaurants that make a stab at it, but it's just not the same. The best way to truly recreate it is to make it ourselves. The Tex-Mex style dish I crave the most is the Sweet Pork Salad from Cafe Rio in my native Utah. There for only 7 bucks you can get a huge delicious meal that will haunt your dreams.



Cafe Rio Style Sweet Pork
4 lbs pork loin
1 liter Coke (not diet)
1/2 cup Brown sugar
1 can (7 oz) green chilies or 3-4 fresh chilies, minced
3-4 cloves minced garlic
1-2 tsp cumin
1 tsp ground mustard
salt to taste

Marinate the pork in a heavy duty Ziploc back with 1 1/2 cup Coke and 1/4 cup brown sugar. Marinate for a few hours to over night.

Put marinade and pork in a crock pot (or in a large pot on the stove). Add the rest of the brown sugar, chilies, garlic, cumin, and mustard, plus enough Coke to cover most of the meat. Cook on high for 3-4 hours, or on low for 8 hours. We usually start it late at night and it is done by the next morning. The pork should be tender and shred easily. Check on it every once in a while to make sure there is enough juice (you don't want it to get too dry).

Cafe Rio Style Cilantro-Lime Rice
1 cup uncooked long grain white rice
1 tsp butter
2 cloves garlic, minced
1 tsp + 1 Tbsp freshly squeezed lime, plus the grated rind
2 1/2 cups chicken broth
2 tsp sugar
3 Tbsp fresh cilantro

In a saucepan, combine rice, butter, garlic, 1 tsp lime, and chicken broth. Bring to a boil and cook on low for 15-20 minutes or until the rice is tender. In the meantime combine 1 Tbsp lime juice plus the rind, sugar and cilantro. Once the rice is done, mix the two together

Cafe Rio Style Black Beans
2 Tbsp olive oil
2 cloves garlic, minced
1 can black beans, rinsed and drained
1 1/3 c tomato juice
1 /12 tsp salt
2 Tbsp fresh cilantro

Pico de Gallo
6 tomatoes, seeded and diced
1 medium onion, diced
1/2 cup fresh Cilantro, chopped
2-3 fresh jalapeño, seeded and minced *optional
2-3 cloves garlic, finely minced
1 1/2 Tbsp lemon juice
salt to taste

Cafe Rio Cilantro Ranch:
1 packet Traditional Hidden Valley Ranch mix
1 cup mayonnaise
1 cup buttermilk
2 tomatillos, husks removed
1/2 bunch fresh cilantro
1 clove garlic
juice of 1 lime
1 jalepeño

or you can use my personal favorite dressing,

Cilantro Lime Vinaigrette:
1/4 cup fresh lime juice
2 cloves garlic, finely minced
1 tsp sugar
2 Tbsp olive oil
1/2 cup fresh cilantro
1/2 tsp salt

Combine all ingredients in a blender. Enjoy!

Also needed:
lettuce (Romaine or other leafy green, not iceburg)
guacamole (optional)
sour cream (optional)
Parmesan cheese
large tortillas

Ok, I know this looks like a huge ordeal. But it is definitely worth the effort.
You will have to start the day before to get the meat going (although in a pinch, you could probably do it in 4-5 hours). Then prepare the rice, beans and pico de gallo as directed.

When you are ready to eat, start with the tortilla. Warm it gently on the stove, then put it on a plate and add a scoop of warmed rice and beans, and a generous helping of pork (also warmed up). Add the lettuce, pico de gallo, a small scoop of guacamole and sour cream and a sprinkling of Parmesan. Serve the dressing of your choice on the side. Eat, and repeat.

Niçoise Salad

This is a French cousin of the Cobb salad. While the exact ingredients vary, there are similar elements that make for a very interesting meal. And if I have to eat salad, it better be interesting.


leafy green salad, washed and torn to pieces
green beans, cut
tuna (canned or grilled)
tomatoes, diced
kalamata olives
hard boiled eggs, sliced
small boiled potatoes

Boil beans until crisp-tender (about 2-3 minutes), take them out and dunk them in cold water. Drain water and set aside. Boil potatoes until tender enough that a knife can slip in and out easily (about 15 minutes). Drain potatoes and set aside.

Fill a pot with cold water, add the eggs and bring water to a boil. Cover the pot and remove from heat. Allow eggs to sit covered for about 12 minutes, then take them out and dunk them in cold water to halt the cooking process. Allow eggs to cool, drain the water, peel, and cut into slices.

Arrange greens with other ingredients placed decoratively around the platter. Serve dressing of choice on the side.
